Carrot Milkshake / Carrot Kheer - A healthy summer drink



This summer has been so hot and I am trying to quench my thirst by experimenting with various fruits and veggies.So, I decided to try out a simple and tasty milkshake.The good part of this recipe is that carrots are already sweet so you don't have to add much sugar or any sugar at all in it.

This is a healthy milkshake and you can have as much as you like without worrying about your weight.Whats more delicious than having a healthy drink without counting the calories right? .With that happy note lets go the recipe.



Preparation time : 10 -15 min

Cooking time :40 - 45 min

Serves: 5- 6 people

Ingredients

- 15 to 20 Carrots
- 1 small cup of sugar or as required.
- 1000 ml of milk
- 2-3  tblsp of butter or ghee (optional)
- Few assorted nuts-cashews,almonds,pistachios.(optional)








Method

Wash and peel all the carrots.Chop them into small pieces.

Then take a pressure cooker or a rice cooker and pour milk into it till it reaches half of the vessel.If you add too much milk it will overflow.Now add the chopped carrots to it so that it is well immersed into the milk.Dont add sugar now as the carrots will not cook properly.

If you are using a pressure cooker ,then wait for 2 whistles.Now switch off and let the steam go out of the cooker- weight completely before you open the lid.

While using a rice cooker,cook it for around 20-30 mins checking in between.The carrot pieces must mash well when u press it.

After the carrots are cooked , remove from the cooker .Using a colander or a laddle, separate the carrots from the milk and put them in a blender to make a fine puree.Don't not throw the milk as you will use it later.

If you prefer a low fat version just add the milk with the carrot puree and blend them together.Let it cool and keep it in the refrigerator and serve chilled.

This is a optional step and if you want a rich version of it,take a large pan and add 2 tblsp of ghee.When its hot add the puree and pour half the milk .Let them boil for 15-20 mins stirring occasionally.After the mixture is reduced pour the remaining milk .Now its time to add the sugar slowly while stirring .The carrots are now well combined with the milk and are ready.Now take another pan and use the butter or ghee and let it sizzle.Add your nuts and saute them till they turn golden brown.Pour it over your cooked carrots and mix them well.

Your carrot milkshake is ready. Bon Appétit :)
