Breakfast Recipe series - Tomato Mozzarella Panini

The Breakfast series is something which I wanted to start for a really long time.But I have been so tardy because taking pictures with camera,editing and posting here is a long process.So unlike other recipes which I take with camera,these breakfast series are gonna be quick posts using Mobile Photography.You can check out  Laavy's Kitchen Instagram page for daily recipes.


Well the first recipe is Tomato Mozzarella Panini inspired from "Panera bread".


What you need :
  • Bread slices - 2
  • Mozzarella slices - 1
  • Parsley leaves - a small bunch
  • Tomato pesto - 2 tsp
You can make the pesto in advance and store it in fridge for about 10 days.This recipe makes about 10 tsp of pesto.

 How to make Tomato pesto :
  • Sundried Tomatoes - 15
  • Olive oil - 2 tsp
  • Sliced / whole almonds peeled - 15    
  • Powdered garlic powder - a pinch
  • Salt - a pinch
Take everything in a blender and grind it coarsely.Store it in an air tight container.


Take a bread slice and spread the pesto,add chopped parsley leaves,cheese and place another slice..Drizzle both slices of bread with olive oil for crispness. Take.Take a panini grill , or a pan and let it toast for 2-3 min in medium flame until the cheese oozes out and its crispy.
