Santa Claus Hat Cupcakes - Christmas special

Happy Christmas everybody . Its time for Christmas lights to shine , gifts to share and time for cute family  get-together.

I have been doing a lot of baking lately so I thought of posting a spicy dish or chat but what is Christmas without cakes right. So I postponed my chat recipe and started making these cute adorable Santa hat cupcakes.

This recipe is for Red velvet cupcakes with cream cheese frosting. Red velvet cupcakes are not just yummy but they bring out the color of Christmas too.

These Santa hat decorations are very easy to make and they doesn't take a lot of time.I have given a step by step procedure for the decoration too so that you guys can try it out and let me now how it turned out .

Preparation time : 10 min

Cooking time : 18-22 min

Makes : 12 cupcakes

Ingredients for the Red Velvet cupcakes

  • 130 grams of cups all purpose flour
  • 55 gms of unsalted butter at room temperature
  • 150 gms of granulated white  sugar
  • 2 eggs
  • 1 tblsp of  red food coloring
  • 2 tblsp of cocoa powder
  • 120 ml of  whole fat milk
  • 1/4  tsp salt
  • 1/4  tsp baking powder
  • 1/2 tsp of white distilled vinegar
  • 1 tsp pure vanilla extract

Ingredients for the Cream Cheese frosting
  • 230 gms of cream cheese, room temperature
  • 60 gms icing or powdered sugar
  • 160 ml heavy whipping cream
  • 1/2 tsp pure vanilla extract
  • 1 box fresh strawberries for decorating

Preheat oven to 350 degrees F (175 degrees C) and line the cupcake pan with cupcake liners.

In a large bowl add the flour, baking powder, salt, and cocoa powder.Mix well.

Using an electric mixer, or with a hand mixer, beat the butter until soft for about 1-2 minutes. Add the sugar and beat until light and fluffy  for about 2-3 minutes.

Add the egg and beat until well incorporated.  Add in the vanilla extract and beat until the mixture is well combined.

In a separate bowl mix the food coloring with the milk.

With the mixer on low speed, add the dry ingredients -flour mixture to the wet ingredients - butter mixture,  then add the red colored milk.Mix well.

In another bowl ,mix the vinegar and baking soda. Allow the mixture to fizz and then quickly fold into the cake batter. The batter is now ready.

Using an ice cream scoop or spoon, divide the batter evenly into the cupcake pan.

Bake in the preheated oven for approximately 18 - 22 minutes, or until a toothpick inserted in the center of the cupcakes comes out clean.

Let the cupcakes cool off completely before you apply the icing.

While the cupcakes are cooling, lets prepare the cream cheese frosting

In the bowl of your electric mixer, or with a hand mixer, beat the cream cheese until smooth.

Add the vanilla extract  and sugar and beat until smooth

Using the whisk attachment, gradually add the heavy cream and whip until the frosting is thick.

Now the frosting is ready to pipe on your cupcakes.

For this decoration i have used a Wilton Round Decorating Tip no 1A

For the Santa Hat decoration :

Wash the strawberries and cut off the stem to create a flat surface. Allow to dry completely on paper towels before topping cupcakes.

Add some frosting on the flat surface of the strawberry and let it rest for a min so that it sticks to the cupcake.

Place the flat end on the center of the cupcake. This forms the base of the hat.

At the center of the cupcake, hold the bag vertically so that the end of the nozzle is very near but doesn't touch the cupcake.

Using the piping bag, pipe a small circle by squeezing the piping bag with even pressure while turning your cake in a circle.

Then pipe a very tiny round on the tip of the strawberry to complete the santa hat.

Have a snowy and merry Christmas :)
