Mysore pak / Gram flour fudge - Diwali sweet recipe

Diwali is one of the most important festivals in India popularly known as the festival of lights .We celebrate it by lighting lamps all over the house and bursting crackers which denotes the triumph of good over evil and the best part is we get to wear new clothes and eat lots and lots of sweets :)

This is one such happy occasion where family and friends gather to have fun and exchange sweets and burst crackers together.

Coming to sweets ,Mysore pak is  frequently made in southern India.It has the richness of ghee , sugar and mouth watering fudgy texture of gram flour.

Preparation time : 10 min

Cooking time :15 min

Makes :13-15 pieces


Ingredients

  • Gram flour - 1 1/2 cup
  • Ghee/clarified butter - 2 cups
  • Sugar - 2 cups
  • Cardamom -6 seeds , peeled and powdered 
  • Water - 1/2 cup


Method

Grease a round bottomed pan / any thick bottomed pan with ghee and keep it aside. 

 In a medium high flame, heat the entire ghee in a small pan until its hot.After its melted completely becoming transparent on the pan, turn the flame to low.Keep a ladle for this separately.Do not switch off the flame,let it simmer in low heat.

In another pan , pour 2 tblsp of the melted ghee and then add the gram flour.Stir the gram flour continuously in a low flame until the color changes into a dark yellow color and the aroma of the gram flour comes out.Switch off the flame and allow the mixture to cool.

Using a sieve, gently sift the gram flour into a bowl so that no lumps are found.Keep aside.

Pour  the water and sugar in a wide pan and in medium flame keep stirring continuously.The sugar starts bubbling up.Do not leave the stove, keep stirring until the sugar becomes transparent and reaches the one-string consistency.To check the consistency,take a drop of the sugar syrup and press between your thumb and index finger.A small sting should form in between them.Now turn the flame to low.

Add half the gram flour mixture and pour one-quarter of the hot ghee which is boiling in a low flame ,stirring continuously.Keep stirring so that no lumps are formed.When you add ghee,the mixture tends to froth up. Don't worry ,this is exactly how it should be.Then add the rest of the gram flour mixture and ,pour a big ladle of ghee.Keep adding ghee every 1 min.

Stir ,stir and keep stirring.When you run out of ghee,you can see that the mysore pak mixture tends to leave the sides of the pan.At this time,switch off the flame and pour the hot mixture into the already greased pan and let it set for 5 mins.Using a knife start slicing them as you want.If you allow it to completely cool off,then  cut them into pieces ,they will crumble.Timing and the exact proportion of the ingredients are very vital for this recipe.
