Adai recipe - Lentil crepes

Adai is a form of dosa and it is made with rice and several variety of lentils.It is a healthy dish and is rich in fiber and protein.It is a hearty dinner and is often served with chutney or vegetable curry.




Ingredients 

  • Raw rice - 1/2 cup
  • Boiled rice - 1/2 cup
  • Bengal gram / channa dal - 1/2 cup
  • Toor dal - 1/4 cup
  • Urad dal - 2 tblsp
  • Moong dal - 2 tblsp
  • Red chilies - 4 to 5
  • Onion - 1 large
  • Cilantro - few leaves
  • Hing - a pinch
  • Salt - 1 tsp or as required
  • Clarified butter or ghee - 3 tblsp
  • Oil 
Soaking the rice and lentils

Wash and rinse the rice well and let it soak separately in water for about 4 hours.



Mix all the lentils channa dal, urad dal, toor dal, moong dal together.Wash and rinse them well and soak them in enough water for 4 hrs.


After 4 hrs drain the water and now its time to grind them to get the batter.

Grinding the ingredients for the batter

In a food processor add the rice, red chilies hing and grind them by adding water little by little to a fine paste for about 10 mins.They shouldn't be too watery or too thick.

Empty them in a container , then take the lentils and grind separately.Grind them coarsly with very little water for just 2-3 mins.

Preparing the batter

Chop the onions and cilantro into very small pieces and mix it well with the rice and lentil batter.Add salt and mix well.

The batter should look something like this. If you are a fan of drumsticks leaves,then chop them up and add them into the batter.



Place a griddle on medium high heat and when its hot ,scoop some batter to it and spread it gently.Add oil on the outside and add some clarified butter all over.


After a min turn it over and let it  roast on a medium heat for 1-2 min.Serve hot with some chutney or raita.
