Garlic Tomato Pasta with side salad

Farfalle is one of my favourite shapes in pasta. It is also called as the "bow- tie" pasta.

This recipe has no cheese or butter. So its a hearty dinner and a low calorie recipe .It has a side salad with fresh crunchy vegetables.

Ingredients for the pasta

  • A box of farfalle pasta
  • White Onion - 1 large
  • Garlic - 5-6 cloves
  • Tomato ketchup - 5 tblsp
  • Margarine - 1tblsp
  • Olive oil - 2tblsp
  • Salt
  • Pepper
  • Red chili flakes
  • Dried parsley - 1/2 tblsp
  • Dried Oregano - 1/2 tblsp

Ingredients for the side salad
  • Lettuce(Romaine/Iceberg) -a small bunch
  • Small baby carrots - 5 or 1 big carrot sliced into cubes
  • Black cherries - 10
  • Apple cider vinegar - 1/2 tblsp or lemon juice - 4 drops

Cooking the pasta

Take a large pot of water and bring it to boil. Add 1 tblsp salt and a 1/2 tblsp of olive oil.Cook pasta according to package instructions. For farfalle it is 7-8 mins if you want it perfect.

Drain the pasta using a colander.Take a large bowl and add the drained pasta.

Add a tblsp of margarine to prevent the pasta from sticking.Season with pepper and keep aside.

Preparing the sauce

Finely mince the garlic and onion. In a large skillet add some olive oil and saute the garlic for a min. Then toss in the onions and saute them until they are translucent for about 3-4 mins.Season with salt ,pepper and red chili flakes.

Add the tomato ketchup and mix well.Add dried oregano and parsley leaves . Now add the pasta and toss them until they are coated evenly.

Prepare the salad

Tear each lettuce into half .Peel the baby carrots and toss them with red cherries.

Add the vinegar and toss them gently.Arrange them on a plate.Add the pasta over the lettuce and serve .

You can chill the pasta and serve it too .People who love cheese can add some shredded cheddar cheese on top just before serving.
