Parupu thogayal /Coconut chutney with spicy lentils


Lentils are rich in protein and dietary fiber .When lentils are combined with coconut ,they give a very crunchy nutty flavor.

This chutney is very easy to make as it needs very few ingredients.You can serve it with a bowl of steaming hot rice, idly,dosa or roti.

Ingredients
  • Toor dal - 5 tblsp
  • Urad dal - 2 tblsp
  • Shredded Coconut - 4 tblsp
  • Curry leaves - 5-6 leaves
  • Red chili - 4 small
  • Tamarind - size of a blueberry (or) tamarind extract - 1/2 tblsp
  • Salt - 1/2 tblsp
  • Oil - 2tblsp
  • Asafoetida / hing - a pinch

Method

Heat a frying pan with oil.After the oil gets hot, add the curry leaves ,red chili and hing.Saute for a min.

Now add the urad dal ,toor dal and saute them for 5-6 mins in medium heat until they turn slightly brown.Do not let them burn.

Next add the coconut and mix well.Saute the mixture for 3-4 mins until the coconut is roasted.Switch off the flame and let them cool down completely.

In a food processor add the mixture along with salt,tamarind and very little water around 5 tblsp.Grind them into a coarse paste.Adjust water and salt as per your taste.

You can serve it with a bowl of steaming hot rice or as a side for idly,dosa or roti.
