Caribbean Fruit Salad with zesty lemon dressing


Caribbean Fruit Salad is a tangy and hot tropical salad.You can use all the seasonal fruits of your choice.
This is perfect snack for a warm summer day.Pineapple and Papaya always go well together.

This recipe has a hot lemon dressing for the salad.You can use any kind of citrus fruits like orange,key lime,blood orange etc

If you want to reduce the heat you can leave out the red chilli flakes in this recipe.

Curried Brocolli and Caramalised Onion - Simple and easy side dish


I have been eating a lot of greens lately.Spinach,green beans,green peas and broccoli.I reason I used to hate broccoli is when I go to a Chinese or Thai restaurant, often broccoli is served par-boiled.I hate that.With no salt or pepper I can hardly keep it in my mouth.Thus I never ate this vegetable for a very long time.After making an Indianized version of it, I have it more often than ever and I am loving it.

Broccoli has numerous health benefits and it has been proven to reduce heart disease.Loaded with vitamins,dietary fiber and much more ,this green beauty is now a staple food of mine.All those broccoli haters,I am sure if you make this recipe,you will start loving this awesome veggie !!

Parupu thogayal /Coconut chutney with spicy lentils


Lentils are rich in protein and dietary fiber .When lentils are combined with coconut ,they give a very crunchy nutty flavor.

This chutney is very easy to make as it needs very few ingredients.You can serve it with a bowl of steaming hot rice, idly,dosa or roti.

Moor Kulambu / Buttermilk Gravy

Cooking is not an easy job.Right from cutting vegetables till washing the dishes it is one heck of a process.Preparing both breakfast and lunch in the morning is no piece of cake.Now a days women leave early to work and hence they have no time to cook or eat. That's when this yummy Buttermilk gravy comes to your rescue.This gravy is really quick to prepare and it tastes great with dosa, chappathi and you can have this for lunch with a bowl of hot rice.

South Indian Dishes are known for their spicy and tangy nature and we tend to use a lot of spices.This Buttermilk gravy has very simple ingredients which can be cooked within just 20 mins.

Egg Curry - Hard boiled eggs in a spicy tomato gravy



Ingredients:

Onion - 2 large

Tomato - 4 small

Garlic- 4-5 cloves

Ginger - a small piece

Eggs - 4

Chilli powder - 1/2 tblsp

Chilly powder - 1 tblsp

Turmeric powder - a pinch

Garam masala  - 1/2 tblsp

Salt - 1/2 tblsp

Pepper - a pinch

Cilantro/ Coriander - a few leaves.

Oil - 3 tblsp

Heavy cream / whipped cream - 2 tblsp

Butter -50 gms.

Cluster beans salad / Guar bean salad / kothavarangai poriyal



Ingredients  

Cluster beans / Guar bean / kothavarangai  - 500 gms

Shredded Coconut - 3 tblsp

Curry leaves - 6 to 7

Mustard seeds - 1 tblsp

Toor dal - 2 tblsp

Coriander powder - 1 tblsp

Chilli powder - 1 tblsp

Olive oil / any oil - 3 tblsp

Asafoetida/ hing - a pinch (optional)

Salt


Method:

Cut the two ends of the cluster beans and chop the rest of them into small pieces.Make sure there are no strings coming out at the ends.

Take a pot of water and  put it on high heat .Add a little salt.Boil the chopped cluster beans in the pot till they are tender.Drain with a colander (or) you can microwave on high heat for about 5 mins.

Take another pan and add olive oil .After the oil gets hot add in the mustard seeds. When they pop add in the curry leaves, toor dal and coconut.

Saute until the coconut turns out crispy for about 6-8 mins.Now add the boiled and drained cluster beans.

Now add salt, chilly powder, coriander powder and saute them for 5 mins until they are mixed well.

Its simple and easy to make.Cluster beans salad is ready to eat .
