Dindigul Thalappakatti Biriyani - Original Authentic Recipe (Vegetarian Version)


Dindigul Thalappakatti Biriyani  is very famous in Tamil Nadu known for its authentic southern spices and texture.It is fragrant, spicy, a bit tangy and full of strong flavors..This recipe is an original authentic recipe but instead of chicken I have replaced it with Soya chunks aka the Meal maker.Its rich in protein and has a great taste and texture.

My husband loves this biriyani so much that he could eat this every single day .Ha ha. He insisted a lot that I make this recipe and post it in my blog.So here goes :) ....




Ingredients:
  • Seeraga Samba rice /KaliJeera rice - 2 cups
  • Water - 4 cups
  • Dried Soya Chunks - 1 cup
  • Curd - 1 cup
  • Freshly squeezed lemon juice from - 1 lemon
  • Cilantro/Coriander leaves chopped - 1 cup
  • Mint leaves chopped - 1 cup
  • Salt
  • Red chili powder - 1/2 tsp 
  • Ghee - 1/4 cup
  • Oil - 3/4 cup

Masala - Ingredients to grind:
  • Shallots(small onion) or Large onion - 2 cups
  • Garlic pods (peeled) - 15-20
  • Medium size ginger - 1
  • Green Chilli - 5-7 depends on your spice level.
  • Cloves - 3
  • Cardamom - 3
  • Cinnamon stick broken pieces - 3
  • Nutmeg - 1/2 piece

Vegetable Kurma - Spicy Vegetable Stew



Vegetable Kurma is a spicy vegetable stew made by boiling vegetables in aromatic spices to form a stew.Spices and coconut are then added to enhance the flavor and texture.The gravy is then cooked in a large pan in medium heat so the vegetables absorb the spicy stew.This is good with rice and roti.

Vathakulambu - South Indian Tamarind Curry


Vathakulambu (or)Tamarind curry is a very popular gravy dish in Southern parts of India especially Tamil Nadu.It is known for its tangy spicy taste.There are different versions of it with or without coconut.This is a typical Iyer style version of Vathakulambu without coconut.I made potato roast as a side dish because vathakulambu and potato roast with rice are the best known combo.

You can make this curry and store up to 3-4 days in the refrigerator.You can also add any kind of vegetables you like.I have tried the same recipe with okra,potato,dried manathakkali, dried sundakai etc.

Moor Kulambu / Buttermilk Gravy

Cooking is not an easy job.Right from cutting vegetables till washing the dishes it is one heck of a process.Preparing both breakfast and lunch in the morning is no piece of cake.Now a days women leave early to work and hence they have no time to cook or eat. That's when this yummy Buttermilk gravy comes to your rescue.This gravy is really quick to prepare and it tastes great with dosa, chappathi and you can have this for lunch with a bowl of hot rice.

South Indian Dishes are known for their spicy and tangy nature and we tend to use a lot of spices.This Buttermilk gravy has very simple ingredients which can be cooked within just 20 mins.

Rice Upma - South Indian savoury dish

This recipe was made by my gradma Mrs.Kalyani Rajamani :) 

At the age of 77,she still makes every recipe in their traditional vessels.This recipe is cooked in a traditional brass vessel to achieve its actual taste :)
