Guacamole - Chipotle Style - Avocado Dip - Healthy and super delicious






Ingredients :

  • Avocado -2 
  • Red onion -1 small
  • Jalapeño-1(deseeded)  (or) red chili flakes -1/2 tsp
  • Lime or Lemon-1
  • Cilantro - a few leaves
  • Salt

Method :

  • Slit the avocados lengthwise. Discard the seed. Scoop out the flesh in a bowl. Roughly mash it with a fork. Let it be lumpy and not very smooth.
  • Finely chop the onion,jalapeño, cilantro. Squeeze the juice of 1/2 or full lemon according to your taste.
  • Mix everything in a bowl along with salt. Adjust salt, chili, and lemon according to taste. 
  • Serve with tortilla chips or use this as a spread in Sandwich, Tortilla, or Roti.

Vegetable Kurma - Spicy Vegetable Stew



Vegetable Kurma is a spicy vegetable stew made by boiling vegetables in aromatic spices to form a stew.Spices and coconut are then added to enhance the flavor and texture.The gravy is then cooked in a large pan in medium heat so the vegetables absorb the spicy stew.This is good with rice and roti.

Paneer Butter Masala



Paneer butter masala is a rich tomato onion gravy with chunks of scrumptious paneer or Indian cottage cheese. It is rich, creamy,with loads of cheesy goodness in every spoon.

Whenever I have guests at home, I make this gravy.Trust me ,the feedback has been great !!.This is quite easy to make but it takes practice to get the right consistency. This has been my go to dish for years and I can say with confidence that each time it gets better and better.

Punjabi Dum Aloo - Fried potatoes in a spicy onion tomato gravy



Punjabi Dum Aloo is a rich gravy with fried potatoes.It is often served with roti or biryani.Baby potatoes are the key ingredient in this recipe but since I couldn't get them I made it with cubed normal potatoes.A large amount of fresh cream is required to get the rich creamy  taste.But if you are on weight watch,you can substitute by adding fresh yogurt.

Curried Brocolli and Caramalised Onion - Simple and easy side dish


I have been eating a lot of greens lately.Spinach,green beans,green peas and broccoli.I reason I used to hate broccoli is when I go to a Chinese or Thai restaurant, often broccoli is served par-boiled.I hate that.With no salt or pepper I can hardly keep it in my mouth.Thus I never ate this vegetable for a very long time.After making an Indianized version of it, I have it more often than ever and I am loving it.

Broccoli has numerous health benefits and it has been proven to reduce heart disease.Loaded with vitamins,dietary fiber and much more ,this green beauty is now a staple food of mine.All those broccoli haters,I am sure if you make this recipe,you will start loving this awesome veggie !!

Mashed potato dip is one of the yummiest dips I have ever tasted.It is insanely easy to make and come in handy if you are having an impromptu party.It is great with tortilla chips but I have also tried this with a bowl of hot rice and you will be surprised by how well it goes..I have tested many versions of this dip and this is so far my personal best in terms of consistency and taste.

Tomato onion raita - Chunky tomato and onion in seasoned yogurt


Tomato onion raita is a popular side dish for Roti / Indian flatbread. It consists of chopped tomatoes and onions in a seasoned yogurt sauce .Since it is chunky, it can be used as a dip for all chips and other crunchy snacks.

Raita is nutritious and helps in digestion.

Ingredients for Tomato onion raita

2  large tomatoes

1 large onion preferably red onions

1 small cup of thick plain yogurt

4 -5 leaves of cilantro

A pinch of salt

A pinch of cumin powder

A small pinch of red chili powder / cayenne pepper


Method:

Chop the tomatoes and onion into very small pieces.

In a bowl add the yogurt ,tomato ,onions, salt, chili powder, cumin powder and mix well.

Top it with finely minced cilantro.

Serve chilled.

Onion Raita - Side dish for Roti

Onion Raita is a popular side dish for Roti / Indian flatbread. It consists of chopped raw red onions in a seasoned yogurt sauce .It can be used as a dip for all chips and other crunchy snacks.

Do you know that raw onions in yogurt has a very cooling effect on your body ?. It is a home remedy for stomach pain or other stomach related issues.Besides it is yummy and nutritious and you can eat it very often.

On a hot sunny day, it is best to have onion raita with flatbread for dinner.

Ingredients for Onion Raita

1 large onion preferably red onions

1 small cup of thick plain yogurt

A pinch of cumin powder

Cluster beans salad / Guar bean salad / kothavarangai poriyal



Ingredients  

Cluster beans / Guar bean / kothavarangai  - 500 gms

Shredded Coconut - 3 tblsp

Curry leaves - 6 to 7

Mustard seeds - 1 tblsp

Toor dal - 2 tblsp

Coriander powder - 1 tblsp

Chilli powder - 1 tblsp

Olive oil / any oil - 3 tblsp

Asafoetida/ hing - a pinch (optional)

Salt


Method:

Cut the two ends of the cluster beans and chop the rest of them into small pieces.Make sure there are no strings coming out at the ends.

Take a pot of water and  put it on high heat .Add a little salt.Boil the chopped cluster beans in the pot till they are tender.Drain with a colander (or) you can microwave on high heat for about 5 mins.

Take another pan and add olive oil .After the oil gets hot add in the mustard seeds. When they pop add in the curry leaves, toor dal and coconut.

Saute until the coconut turns out crispy for about 6-8 mins.Now add the boiled and drained cluster beans.

Now add salt, chilly powder, coriander powder and saute them for 5 mins until they are mixed well.

Its simple and easy to make.Cluster beans salad is ready to eat .

Pan seared Sweet Potatoes


Sweet potatoes and very low in Saturated Fat and Cholesterol. It is also a good source of Dietary Fiber, Vitamin B6 and Potassium, and a very good source of Vitamin A, Vitamin C and Manganese.
As the name suggests, sweet potatoes are basically sweet, soft and mostly eaten boiled/baked. They can be boiled and eaten raw or mashed. Sweet potato soup is another enjoyable dish. Recipe for it will be posted soon.

This recipe shows how to pan sear sweet potatoes. The flavour is both sweet and spicy.
