Stuffed potato roti / Aloo paratha - Indian flatbread with stuffed spicy mashed potatoes


Aloo paratha is a Indian flatbread stuffed with spicy mashed potatoes. It is made with a whole wheat flour and is rich in fiber and carbohydrates.It is often served with raita.

Here is the step by step procedure with pictures for making the aloo paratha.





Ingredients for making roti :

4 cups of  Whole wheat flour

1/2 tblsp salt

2 tblsp of vegetable oil / cannola oil

1/2 cup luke warm water


Ingredients for making stuffed potatoes:

2 large potatoes

1/2 tblsp cumin powder

1/2 tblsp of coriander powder

1 tblsp red chili powder / cayenne powder

a pinch of turmeric powder

1 tblsp garam masala

5-6 leaves of cilantro

1/2 tblsp of salt

2 tblsp oil


Making the stuffing :

Cut all the potatoes in half and boil them until they are soft. Quickly blanch them in cold water and peel out the outer skin.
Using a masher , mash the potatoes until they are smooth.

Heat oil in a pan. Add the mashed potatoes and cook for 5 mins.Add salt and mix well.

Add turmeric powder, red chili powder / cayenne powder , garam masala, coriander masala ,cumin powder and finely minced cilantro leaves.

Combine the mixture and let it cook  for 5-7 mins until the potatoes are well combined with all the spices.Remove from heat and allow the mixture to cool off completely.

The stuffing is ready.


Making the roti :

Measure 4 cups of whole wheat in a large bowl. Add 1/2 tblsp of salt and mix well.Make a hole in the center.

Heat water until its luke warm and not too hot .Pour 1 tblsp of oil and very little water in the hole and start kneading the dough.Add water little by little until you get a smooth dough. Again add 1 tblsp of oil .Knead again.

Keep kneading until the dough doesn't stick to the sides of the bowl.If the dough is too sticky add little flour.Make the dough into a big round ball .Apply oil on the outer side and place the ball into the bowl.

Cover the bowl with a plastic wrap or cover it with a lid. Let the dough rest for atleast 30-40 mins.This makes the dough soft and smooth.

Now remove the wrap and start kneading again.You can see that the dough had become very soft.Keep kneading a few more times .The dough will look like this.


Now divide the dough into small equal parts .Take one piece and place it between your palms and start rolling it until it becomes a small ball with no cracks.Repeat the process until you get several balls of the same size.



Now its time to flatten the dough to form roti. Take a wooden board or any flat clean surface and sprinkle some flour on it so the dough doesn't stick.With the help of a rolling pin ,start flattering the dough with very little pressure.



After flattening on one side turn the dough to 45 degrees and roll it again. Sprinkle flour on both sides. Repeat the process and apply very little pressure on all sides evenly until you get something like this.


Take a small amount of the stuffing and place it on the center of the roti.


Start folding the roti on all sides until the stuffing it not seen outside. Remove the excess dough on top. Now turn it back so that the folded part is facing the board.Start flattening the roti again with the rolling pin.The roti must not be very thin as stuffing will start sticking to the board.



After flattening the roti should look like this.You can see that the stuffing is blended well in the dough.



Start toasting the roti .Heat a wide flat pan in medium heat.Place a roti on the pan and wait for about 30 sec.Bubbles will start to appear.Now turn it around and wait for 30 sec.Turn it again and apply a few drops of oil on it and spread it evenly.Again turn it and apply oil and repeat the process until the roti is well toasted.


Repeat the process for all the dough balls and make several stuffed roti. Scoop some melted butter on top of each roti for an extra flavor.

Serve hot with tomato ketchup or cold raita.
