Macadamia nut white chocolate cookies

Macadamia nut white chocolate cookies with milk

              Cookies with milk is a real comfort food when you are at home watching TV with your favourite program going on.Munching the moist and warm cookies taken just out of the oven are even more delicious.Nuts and chocolates always blend well together in bread,cakes and cookies.They give a moist yet crunchy taste.I have experimented with various nuts and chocolate chips but this is my first recipe with Macadamia nuts.

 Cookies are normally baked in a cookie tray but tried baking them in a muffin pan.I did this since i wanted a perfect round-shaped cookie,slightly thicker than the usual cookies.They turned out really cute and I loved it !!

Macadamia nuts are insanely delicious but very high in saturated fat.So people who watch their weight can stay away from these nuts and substitute them with other nuts like walnuts,pecans or hazelnut.







Ingredients

        260 gms of  All purpose flour or white whole wheat flour

113 gms of butter or margarine, at room temperature.

200 gms of light brown sugar

100 gms granulated white sugar

1tsp of pure vanilla extract

1 large egg

1 tsp of baking soda

¼ tsp of salt

A handful of white chocolate chips

A handful of macadamia nuts, coarsely chopped 



Method :

Pre-heat your oven to 350°F. 

In a separate bowl, beat the butter and light brown sugar until soft and creamy. You can use a stand mixer or an electric hand mixer.Gradually add the granulated white sugar, vanilla extract ,egg  and beat them on a medium speed until light and fluffy.If you do not have a mixer,use a wire whisk and beat them until smooth. 

In another bowl mix the flour, baking soda and salt.Slowly add the dry ingredients to the butter mixture and beat them gently for few mins until they are well incorporated.Add the white chocolate chips,nuts and gently mix them using a spatula.The dough will be very thick .

Butter your muffin pan/cupcake tray .You can use a butter flavoured cooking spray to grease them.Using an ice cream scoop or a spoon, scoop a small amount of the dough into the cupcake pan.

Remember that the cookie will be nearly 3 times the size out the dough after baking.So don't put too much dough into the pan.

Bake for 9 to 11 minutes or until light brown. Take them out of the oven and allow them to cool for 1 - 2 minutes.Remove from the pan using a spoon.You can eat them while they are warm or allow them to completely cool off before storing the rest in an air tight container.

Enjoy them directly or you can dip these rich moist cookies in a glass of milk.Remember to eat just a few cookies a day as they are very high in saturated fat.

  2. Nice n interesting combination of cookies, I don't think ll get macadamia nuts here in Bangalore, so almonds should be a good option!
