Lemon Crinkle Cookies


Helloo everyone. Took a looooong break from blogging due to personal reasons. Being a stay at home mom makes me appreciate all the free time I had before.LOL. I used to sit hours and hours styling my food, taking pictures, drafting recipes. Now free time is a luxury. Though I miss blogging I do love all the precious moments with my little one. These tiny humans grow up so fast and I wish I could record each and every moment. Seeing the world through my baby’s eyes is a whole different experience and I'm grateful for everything God has given me.

So, back to blogging with a new recipe. These Lemon Crinkle cookies melt into your mouth. They are not too sweet and perfectly tangy balancing your palette. Let's go on to the recipe.

Ingredients :
  • 2 cups all-purpose flour
  • 1/2 cup butter, softened at room temperature 
  • 1/4 tsp salt
  • 1 cup sugar
  • 2 large eggs
  • 4 tblsp lemon juice
  • 1 tblsp lemon extract
  • 2 tsp baking powder
  • 1/8 tsp baking soda
  • 3/4 cup powdered sugar 
  • 2 drops yellow food coloring (optional)

Method :

  • Combine all the dry ingredients and keep aside. Cream together butter and sugar until it’s really creamy and fluffy. 
  • Add in eggs, lemon juice, lemon extract, food coloring(if using) and beat until well combined. Add the dry ingredients into this and mix well without lumps. Do not over-mix.
  • Slightly thick and sticky dough is formed. Chill it for a few hours in the refrigerator. Take out the dough and roll it into small balls. Take powdered sugar in a bowl. Coat each ball evenly in it.

  • In a preheated oven of 350 F, place the balls onto a baking sheet and bake for 12-15 mins. The cookie should be soft when you touch. Cool completely and serve it.

Sugar cookies are crunchy unlike normal cookies.They are baked flat on top so we can start icing on them easily.You can store them in the refrigerator for almost a week.

Strawberry Shortcake - Sponge cake layered with real strawberries and whipped cream

Happy Mother's day to my mom and all wonderful moms out there !!





Strawberry Shortcake has always been my favorite of fresh fruit cakes.They are delicate ,moist and just melt in your mouth. Layers of sponge cake are sandwiched between sweet delicious strawberries and fresh whipped cream.

Sponge cake  has no butter or oil in it.It gets its soft pillow like texture with the help of eggs .The egg yolks and whites are separated and whisked in a very high speed and the cake batter is folded gently.So be calm and gentle while handling this cake else you will end up with a big mess.Ya I learned my lesson a little late :)

Macadamia nut white chocolate cookies with milk

              Cookies with milk is a real comfort food when you are at home watching TV with your favourite program going on.Munching the moist and warm cookies taken just out of the oven are even more delicious.Nuts and chocolates always blend well together in bread,cakes and cookies.They give a moist yet crunchy taste.I have experimented with various nuts and chocolate chips but this is my first recipe with Macadamia nuts.

 Cookies are normally baked in a cookie tray but tried baking them in a muffin pan.I did this since i wanted a perfect round-shaped cookie,slightly thicker than the usual cookies.They turned out really cute and I loved it !!

Banana bread - A healthy breakfast with the goodness of banana

Bananas are really yummy and are rich in vitamin B6. Using banana in cakes,breads and muffins does add an additional flavor.Banana bread is very easy to make by making use of all the ingredients we have at home.It is great for breakfast and kids love them.




While making banana bread make sure to use very ripe bananas as they are more sweeter than regular bananas.We often discard the bananas which are very ripe as they have brown spots on them and they are really mushy.Well, those are the bananas which we are gonna use in this recipe.

I love adding chocolate to anything :) .Adding chocolate to banana bread does give an amazing exotic flavor.This recipe makes moist banana bread which can be stored for almost a week if refrigerated.

Chocolate Cake using a pressure cooker / steamer

This recipe shows how to make a chocolate cake in a cooker ,without using  an oven.



Ingredients
  • 1 cup all purpose flour 
  • 3 eggs
  • 1/2 tsp baking powder
  • 40 gms dark chocolate (or) 2 tsp of cocoa powder
  • 1 tbsp milk
  • 1 cup castor sugar
  • 3/4 cup margarine (or) unsalted butter .
